A copper pot still is an apparatus used for distilling spirits, such as bourbon. Heat is applied directly to the pot to boil the distiller's beer (mash that has been fermented and now contains alcohol) and separate the alcohol vapor. The alcohol vapor is then collected and condensed into liquid form, re-distilled once or twice more, filled into barrels, and stored for aging before it's ready to be bottled and consumed.
